Adzuki Bean Water

A simple and soothing infusion made from adzuki beans, perfect as a low-calorie beverage that aids in hydration and may help curb cravings.

Ingredients

  • 1 cup dried adzuki beans, rinsed
  • 8 to 10 cups water
  • Optional: 1-inch fresh ginger slice
  • Optional: 1 tablespoon lemon juice or 1 cinnamon stick
  • Optional: pinch of sea salt

Instructions

  1. Rinse the beans thoroughly under cold water, removing any debris.
  2. Place beans in a large pot with 8 to 10 cups of fresh water and bring to a gentle boil over medium-high heat.
  3. Reduce heat to low and simmer uncovered for 30 to 45 minutes.
  4. Add ginger or cinnamon in the last 10 to 15 minutes of simmering.
  5. Remove from heat and strain the liquid through a fine mesh sieve into a pitcher.
  6. Let it cool to room temperature, then refrigerate if serving cold.

Notes

Store strained adzuki bean water in a covered container in the fridge and consume within 3 to 4 days.
