  • 1 cup hot water
  • 1 cup cold water or ice
  • 1 cup light whipped topping or whipped cream alternative
  • 1 cup Greek yogurt (low-fat) or cottage cheese, blended smooth (optional)
  • 1/2 cup fresh or frozen berries (finely chopped)
  • Optional: 1 package sugar-free pudding mix or protein powder

Instructions

  1. Dissolve the gelatin: Pour sugar-free gelatin into a bowl and stir in hot water until fully dissolved.
  2. Add cold water: Mix in cold water or ice cubes to cool the gelatin.
  3. Prepare creamy component: Whip the light whipped topping or blend Greek yogurt until soft peaks form.
  4. Fold gelatin into cream: Gently combine the cooled gelatin into the whipped topping or yogurt in thirds.
  5. Add extras: Stir in finely chopped berries or protein powder until evenly distributed.
  6. Chill until set: Spoon into ramekins and refrigerate for 1 to 2 hours.
  7. Serve and garnish: Top with fresh berries or mint leaf before serving chilled.
