Dr. Jennifer Ashton’s Gelatin Trick Recipe

A refreshing gelatin-based treat combining low calories and high protein, ideal for weight management.

Ingredients

  • 2 tablespoons unflavored gelatin
  • 3 cups water or juice (1 cup cold, 2 cups warm)
  • Sweetener (optional; honey, agave, or stevia)
  • Fruit puree (various options such as berries or mango)
  • Lemon juice (optional)

Instructions

  1. Gather ingredients: unflavored gelatin, water or juice, sweetener, fruit puree, and lemon juice if desired.
  2. Dissolve gelatin: Sprinkle 2 tablespoons of gelatin over 1 cup of cold water (or juice) and let sit for 5 minutes to bloom.
  3. Heat mixture: Gently heat the remaining 2 cups of water (or juice) until it begins to simmer.
  4. Combine: Add the bloomed gelatin mixture to the warm liquid, stirring continuously until dissolved.
  5. Add sweetener and puree: Remove from heat and add sweetener and fruit puree, stirring well.
  6. Pour and cool: Pour the mixture into molds or a dish, let cool at room temperature for 15 minutes, then refrigerate.
  7. Chill: Allow to chill for 2-4 hours until set, then enjoy!

Notes

Use zero-calorie sweeteners for a low-calorie version and experiment with different fruit purees for variety.
