Dr. Rocio Pink Gelatin

A low-calorie, protein-forward snack that satisfies sweet cravings with a soft, jelly-like texture.

Ingredients

  • 1 packet flavored gelatin mix (strawberry or similar)
  • 1 packet unflavored gelatin or collagen powder
  • 2 cups cold water
  • 1 cup hot water
  • 2 tablespoons lemon or lime juice (optional)
  • Sweetener to taste (stevia or erythritol)

Instructions

  1. Heat hot water to just below boiling, about 200°F.
  2. Pour the hot water into a heatproof bowl and sprinkle the unflavored gelatin evenly over the surface.
  3. Stir until completely dissolved, about 1 to 2 minutes.
  4. Add the flavored gelatin mix and whisk until dissolved, about 30 to 60 seconds.
  5. Stir in the collagen powder, then add cold water to reach your desired volume.
  6. Pour the mixture into a shallow dish or individual containers.
  7. Refrigerate uncovered for 15 to 30 minutes, then cover and chill for an additional 2 to 4 hours until fully set.
  8. Serve chilled or cut into cubes; store leftovers in the fridge for up to 5 days.

Notes

For a creamier texture, stir in a splash of cold milk or dairy-free alternative before chilling.
